White Edible Ginger is one of the most useful and rewarding plants you can grow. Known worldwide for its flavorful underground rhizomes, this tropical plant has been used for centuries in cooking, traditional medicine, and natural wellness. The fresh roots have a warm, spicy, slightly sweet flavor that can be used in teas, stir-fries, soups, candies, baked goods, tinctures, and more.
Ginger is highly valued for both culinary and traditional medicinal use. Historically and scientifically, ginger has been studied for its potential to support:

White Ginger grows from thick underground rhizomes and produces long green tropical foliage that can reach 3–4 feet tall in warm conditions. In ideal climates it can remain perennial, but in Arkansas it is best grown as a seasonal crop, in containers, or lifted before frost.
How to Grow:
Plant ginger root pieces horizontally with the buds or “eyes” facing upward, about 1–2 inches deep in rich, loose, well-draining soil. Ginger prefers partial shade to filtered sun, warm temperatures, and regular moisture. It thrives in containers, raised beds, greenhouses, and food forest understories.
Harvesting:
Young “baby ginger” can be harvested in about 4–6 months for tender mild roots. Mature ginger typically takes 8–10 months. Harvest before frost in colder climates.
Overwintering / Perennial Potential:
In warm climates, ginger can be perennial. In Arkansas Zone 7, lift and store the rhizomes indoors before frost or keep plants in a greenhouse. Rhizomes can also be stored and replanted the following spring.

- Open immediately.
- Inspect and hydrate if needed by soaking for 1–2 hours in room temperature water.
- Plant quickly in moist, rich soil.
- Keep warm—germination and growth are best above 70°F.
- Keep evenly moist but not soggy.
- Acclimate gradually if moving outdoors.
